A delicious light flavoured soup; a meal in itself particularly on a hot day. 

The subtle flavours can be enhanced by the addition of a little harissa or chopped green chilli. This will enhance the flavours if not over-generous.

Ingredients

Preparation: 10 minutes  Serves: 2

1 cucumber

1 avocado, ripe

4 sprigs mint

1/2 cup water, chilled

1 lime, juiced

1/2 tsp salt 

1 tsp cracked black pepper

1/2 tsp harrisa or 1 green chilli (optional)

8 ice cubes (to serve)

Method

CUT cucumber in large chunks.

COMBINE cucumber, avocado, mint and water. 

BLEND the mix until it is smooth (approx 2 mins).

ADD lime juice, salt and pepper.

TASTE and adjust seasoning as required. (Add harissa or green chilli cautiously.)

ADD more water to thin the soup as required. (Do not add much water because when you serve the soup the ice cubes will melt and further thin it.) 

CHILL if not serving immediately.

Serve

Add ice cubes and a sprig of mint.
