A tasty way to enjoy avocado on bread.

Tartine is a French word meaning open sandwich and it also suggests bread with rich or elaborate toppings. Such a great description for this light meal based on a lunch I eat at Pain Quotidian. It was a cool November day and my friend and I started with a warm carrot soup followed with thinly sliced rye bread topped with this texture and flavour.  Make your own tasty combo.

Ingredients

prep: 10 mins   serves: 2

4 slices GF bread

1 avocado, ripe

2 tbsp (¼ cup) chickpeas

2 tbsp pumpkin seeds

1 tbsp sunflower seeds

1 tbsp lemon juice

¼ tsp salt

½ tsp black pepper, cracked

½ cup sprouts

Method

MASH the avocado and spread on the bread. 

SPRINKLE with chickpeas and seeds.

SQUEEZE a little lemon juice (this will delay the discolouring of the avocado) on each slice and add salt and pepper

TOP with sprouts

Serve

Serve with mixed salad
