Watermelon and Feta Salad

A refreshing summer salad.

The sweet watermelon and salty feta are a tasty combination, enhanced with the mint or basil. 

I first encountered this dish in a restaurant in Lusaka, Zambia. I ordered it as a starter but was so satisfied that it became my complete lunch. It has since become a familiar dish in my house. I have subsequently seen several variations including the addition of cucumber, cashew and red onion. Experiment with your own combination of fruit, veg, nuts and cheese.

The quantities below are a guide only.

Ingredients

Preparation:  10 mins Serves: 2 (as light meal)

1/2 watermelon, medium-size

4 tomatoes

1/2 bunch basil or mint

100 gm (1 cup) feta*

1/2 tsp cracked black pepper

1 tbsp olive oil

1tbsp lemon juice

Method

CUT the watermelon into slices approx 2.5cm (1 inch) thick.

REMOVE the seeds and the rind and cut into cubes.

CUT tomatoes into cubes.

CUT or crumble the feta.

TEAR the mint/basil leaves.

MIX in the serving bowl.

POUR over the oil and lemon juice.

ADD pepper to taste.

Serve

Starter, light meal or salad to accompany a main course dish.

Notes

  • if adding red onion, soak it for 30 minutes before adding.
